Easter Crown Roast Rack of Lamb

The “Eats & Drinks” section of the Detroit News has another low-carb lamb recipe that will make for a great Easter feast–Crown Roast Rack of Lamb With Garlic and Rosemary.

* 2 racks of lamb, about 8 to 9 bones each
* 1/4 cup extra virgin olive oil
* 8 large garlic cloves cut into fine, paper-thin slices
* 2 tablespoons picked fresh rosemary leaves
* Sea salt
* Freshly ground black pepper
* 2 cups light vegetable or poultry stock
* 2 cups dry red wine
* 2 tablespoons unsalted butter
* 1 bunch of rosemary for garnish

The recipe makes 4 generous servings of about 4 grams of carbohydrates each. Complete directions are available here.
