Easter Crown Roast Rack of Lamb

The "Eats & Drinks" section of the Detroit News has another low-carb lamb recipe that will make for a great Easter feast--Crown Roast Rack of Lamb With Garlic and Rosemary.

  • 2 racks of lamb, about 8 to 9 bones each
  • 1/4 cup extra virgin olive oil
  • 8 large garlic cloves cut into fine, paper-thin slices
  • 2 tablespoons picked fresh rosemary leaves
  • Sea salt
  • Freshly ground black pepper
  • 2 cups light vegetable or poultry stock
  • 2 cups dry red wine
  • 2 tablespoons unsalted butter
  • 1 bunch of rosemary for garnish

The recipe makes 4 generous servings of about 4 grams of carbohydrates each. Complete directions are available here.
