Low-carb fried chicken

There’s a new recipe for low-carb fried chicken on the Low Carb And Lovin’ It website. While we haven’t tried it [yet], it’s making us hungry just thinking about it:

* 3 to 6 cups vegetable oil (more or less depending on pot used)
* 1 whole chicken, cut into 8 pieces, or 3 pounds boneless chicken breast
* 3 eggs
* 1/4 cup heavy cream or water


* 2 1/3 cups soy flour
* 2 teaspoons salt
* 1 teaspoon black pepper
* 1 teaspoon garlic powder
* 1 teaspoon poultry seasoning

There are 13 grams of carbs per serving with 5 grams of fiber, making for 8 net carbs. For baking instructions, click over to the TV show’s website.
