Italian Frittatas Recipe

italian-frittatas.jpgAtkins has published a great recipe for Italian Frittatas. In these “flat omelets,” eggs are used simply to bind together low-carb ingredients such as vegetables, seasonings, and meats.

Ingredients:

* 1 tablespoon olive oil
* 1 tablespoon butter
* 2 garlic cloves, minced
* 1/2 cup chopped onion
* 1 large zucchini, sliced
* 1 teaspoon dried basil
* 8 ounces Italian sausage, uncooked, crumbled
* 8 large eggs
* 2 tablespoons water
* 1/4 teaspoon salt
* Freshly ground pepper to taste
* 1/3 cup Parmesan cheese, grated
