Low carb diets keep hog farms booming

Whooda known that hog farmers would become rich by us Americans on the Atkins diet? That and a disease.

Times are good for hog farmers in California and the rest of the nation, fueled in part by the low-carb diet craze and by rising exports to countries where worries about mad cow disease have reduced beef consumption. With the holiday-ham season here, pork producers are enjoying near-record prices.

This quote from Steve Meyer, a consultant for the National Pork Producers Council, makes the article worth reading:

bq. “We have a lot of people who will order a whole pig ahead of time,” he said. “But most people just show up. They pick out their pig, and we kill it and away they go.”
