Low-carb ham and beer cheese soup

A recipe with beer and cheese can never go wrong!

* 1 cup chopped onion
* 1/2 cup sliced celery
* 2 tablespoons butter
* 3 tablespoons flour
* 1 cup hot water
* 1 chicken bouillon cube
* 3 cups half-and-half
* 3 cups diced ham
* 16 ounces of shredded cheddar cheese
* 1 bottle of beer

In a large pot on medium-high heat, sauté the onion, celery and butter until they are tender.

In a small bowl, combine the hot water and bouillon until the cube is dissolved. Set aside.

Add flour to the large pot and stir well. Add half-and-half and stir.

Add the cheese and stir it until it’s melted and incorporated in the flour mixture.

Add ham, beer and bouillon broth.

Serve this soup with crusty bread.
