Exclusive SweetPerfection Pecan Brittle Cookie Recipe

Crunchy SweetPerfection Pecan Brittle Cookies

1 cup chopped pecans
1 cup butter at room temperature
1 cup SweetPerfection
1/2 tablespoon vanilla extract
2 cups Almond or Chestnut flour
3/4 cup unsweetened coconut flakes

Preheat oven to 325 degrees. Spread pecans over ungreased baking sheet and bake 5 minutes until lightly browned. Remove from oven to cool at least 3 minutes.

Place butter, SweetPerfection and vanilla in bread machine, set to mix dough, or in mixer using dough hook. Mix contents thoroughly. Add the slightly warm nuts and continue to mix. Add the flour and coconut flakes and mix thoroughly.

Turn off bread machine and empty contents onto 13″ x 9″ cake pan. Spread with gloved fingers or strong spoon to evenly cover the cookie sheet with the dough.

Bake 30-35 minutes. Remove from oven. If desired, sprinkle 1/4 cup SweetPerfection on top of cookies. Wait until cool and then break crunchy cookies into random pieces with butter knife.

Servings: 2″ x 1″ squares=50 servings, 1g net carb, and 40 calories each.

NOTE: To make bar cookies instead, just DOUBLE THE RECIPE and cook for 5-7 minutes longer in a 17″ x 2″ x 1″ cookie sheet pan.
