Ratatouille Shirataki w/Rosemary Vinaigrette Sauce

RATATOUILLE SHIRATAKI W/ROSEMARY VINAIGRETTE SAUCE

¼ cup cider vinegar
2 tablespoons Dijon-style mustard
1 teaspoon minced fresh rosemary
2 tablespoons olive oil
1 small eggplant, peeled and diced
1 small zucchini, diced
1 yellow bell pepper, cored, seeded, and diced
3 large Roma tomatoes, seeded and diced
2 large scallions, sliced
2 8 oz pkgs Konjac Shirataki Noodles
2 tablespoons toasted pine nuts
2 tablespoons Feta cheese, crumbled
Garnish: Rosemary sprigs, if desired
