The Hamptons Diet Cookbook: Bacon and Eggs ‘Muffins’ Recipe

This week, I’ll be featuring some exclusive recipes from a new book by bestselling low-carb author Dr. Fred Pescatore called The Hamptons Diet Cookbook. I previously reviewed this fantastic new book which has 200 recipes to help you keep your low-carb lifestyle interesting.

Today’s recipe is from the Breakfast foods chapter of the book. ENJOY!

BACON AND EGGS “MUFFINS”

6 strips bacon
2 tablespoons macadamia nut oil
1/4 cup Spanish onion, diced
1/4 cup gruyere grated
6 eggs
2 tablespoons heavy cream
Salt
Black pepper, freshly ground
Macadamia nut oil in a spray bottle
