Dr. Fred Pescatore Interview Not Short On Surprises

"The Hamptons Diet" author Dr. Fred Pescatore has been one of the low-carb lifestyle's most ardent supporters over the past few years. He recently encouraged people who believe in this way of life to keep up the good fight in defending it.

I had the privilege of interviewing him recently to get his thoughts on the low-carb lifestyle and where it is heading from here, his comments about the late Dr. Robert C. Atkins, why his Hamptons diet is different from the Atkins diet, and what people who support low-carb living need to do to impact their culture with the incredibly positive lower-carb message.

Here are just a few excerpts:

THE ATKINS APPROACH WAS VERY SIMPLE -– EAT NO CARBS; BUT IT WASN’T THE HEALTHIEST WAY TO TEACH PEOPLE TO EAT FOR THE REST OF THEIR LIFE.

WE ARE BEGINNING TO UNDERSTAND THAT FRESH AND LOCAL FOODS MAY BE EVEN HEALTHIER FOR US THAN ORGANIC FOODS GROWN 3,000 MILES FROM OUR DOOR. IT IS A TOUGH SELL BUT EVENTUALLY PEOPLE HAVE TO GET IT OR THEY JUST WON’T BE HEALTHY.

THE USDA FOOD PYRAMID WAS SET UP TO PROMOTE AGRICULTURE, NOT TO TELL US HOW TO EAT IN A HEALTHY WAY. WE ARE BEING MADE UNHEALTHY SO THE CORPORATIONS THAT RUN AMERICA CAN HAVE HEALTHY BOTTOM LINES.

THE BEST THING IS FOR PEOPLE LIKE YOU AND OTHERS OF US WHO STILL BELIEVE IN THIS WAY OF EATING TO CONTINUE TO PROSELYTIZE THE MESSAGE IN SUCH A WAY THAT THE MEDIA WILL EMBRACE IT, NOT DEMONIZE IT.
