Straight from the kitchen of Kimkins low-carb dieter Lisa Jackson comes this incredible Low-Carb Chicken Crepes Florentine recipe. Mmmmm!

That picture looks so delicious and makes for the perfect meal for you and your loved ones or for special guests. You can even surprise them and make this meal for them whether they low-carb or not!

This recipe is Kimkins-approved and oh so good! ENJOY!

LOW-CARB CHICKEN CREPES FLORENTINE

3 large egg whites (set yolks aside for hollandaise sauce)
1/2 chicken breast
1/2 cup frozen spinach, defrosted
1 mushroom sliced
1 tsp chopped onion (optional)
1/2 tsp olive oil (optional)
1 Tbsp (per crepe) shredded low fat mozzarella cheese (optional)
1/2 to 1 packet of splenda (depending on how sweet you like your crepes)
dash of salt & pepper
dash of cream of tartar (optional)
butter flavored nonstick spray
