People often write to me asking why the low-carb message isn’t getting the recognition that is so aptly deserves in the media. With all the scientific evidence supporting saturated fat consumption and carbohydrate-restriction, where are the representatives of this way of eating who can articulate and teach these principles to the general public in an engaging and entertaining way? Yes, I have my “Livin’ La Vida Low-Carb Show” podcast which has been very successful on iTunes, but I am but merely an educated lay person. Wouldn’t it be nice to have someone like a medical doctor who knows all the ins and outs of the healthy low-carb lifestyle while being passionate enough to share about it in layman’s terms and maintaining the integrity of the overall high-fat, low-carb principles we know know are 100% true? Well, now we do with the exceptional Dr. James E. Carlson.
