Low-carb green beans with lemon vinaigrette

These delicios steamed green beans are low on carbohydrates, but not flavor. They are a perfect addition to either a weeknight or even holiday meal.



  • 1-1/4 lb. green beans, trimmed and rinsed
  • 3 Tablespoons fresh lemon juice
  • 2 Tablespoons Duke’s Sugar Free mayonnaise (BEST EVER!)
  • 1 Tablespoon minced shallots
  • 3/4 teaspoon salt
  • Freshly ground black pepper to taste
  • 1/2 cup Colavita Extra Virgin Olive Oil
  • 1/4 cup chopped red bell pepper


  1. Steam the green beans until tender (about 5 minutes).
  2. In a small bowl, combine the lemon juice, mayonnaise, shallots, salt, and pepper.
  3. Add the oil in a slow stream, whisking constantly until the vinaigrette is well blended.
  4. Toss the cooked beans with the red pepper and enough vinaigrette to coat, about 1/3 cup.
  5. Serve warm, with extra vinaigrette on the side, if you like.

Makes 4 Servings with 4.5g net carbs per serving
